The origins of our White Peony Tea


Our supreme grade of White Peony tea leaves (Pai Mu Tan) comes from the hometown of White Tea, in Fujian Province China, where it has been so named due to the larger leaves of the Camellia Sinensis tea plant cultivar having a similar appearance to the petals from the White Peony flower.

Hand picked on an early Spring morning with experience that has been handed down through the ages, the highest quality whole supple young leaves are collected before being naturally withered and dried in the sun. This simple, natural process, free of oxidization, allows White Tea leaves to be deficient in caffeine and preserve all its nutrients when it was first picked, including active enzymes, antioxidants, and polyphenols. Of which, the pharmacological benefits are said to be vast and may have cancer-fighting properties.

Once the leaves have dried, they have a plush, downy white whole-leaf appearance full of tender leaves and snowy silvery buds. When brewed, a golden peach infusion is produced that has the aroma of a fresh orchid. Upon the first sip, you will be greeted with a uniquely 'plush' mouthfeel partnered with light floral notes and honeyed pear.

With this white tea being low in caffeine, tea drinkers can enjoy White Peony at any time of day or night, unlike black and green teas.

Fujian is a coastal province in Southeastern China on the shores of the South China sea, facing the 110 mile-wide Taiwan Strait. The province is mostly mountainous and heavily covered in dense forests. The elevation varies from sea level to 2,174m at the peak of Mount Huanggang, in the Wuyi Mountains, offering a formidable natural barrier between the coast and the interior of China.

Rivers are of great importance for transport and irrigation. The climate here is temperate Humid Subtropical (CFA), with hot summers of high rainfalls and cool, dryer winters, with occasional snow in the northwest and at higher altitude. Across the year, the skies are mostly cloud-covered, with low wind. The province has a whole as varied vegetation, ranging from tropical to cold temperate species.

At lower elevations, the subtropical forests are home to evergreens, hardwood trees and confiners, lianas and ferns, along with a diverse fauna which includes many birds, amphibials and reptiles. Higher up, deciduous trees, conifers and rhododendrons are plentiful. Oolong, Black and smoked teas originate from the Wuyi mountains, in the North of the province.; whilst the white teas hail from Fuding and Zhenghe counties, closer to the coast, but still elevated, on rich, fertile forest soils. Rice cultivation is common in the valleys.
