Matcha is a finely ground Japanese green tea powder that is whisked into water, allowing you to consume the whole tea leaf. Compared to regular green tea, matcha has a stronger flavour, vibrant green colour and higher concentration of antioxidants and nutrients.
Yes, matcha is good for you. It is rich in antioxidants called catechins, including EGCG, as well as polyphenols, vitamins C and E and essential minerals like potassium and iron. Matcha also contains L-theanine, an amino acid that supports cognitive function and promotes calm, focused energy.
- Unlike other teas, matcha is whisked, not steeped, by mixing the powder directly with water
- Traditionally, matcha is prepared using a bamboo whisk (chasen), though an electric whisk can be used for speed
- Measure 1–2g of matcha using the Perfect Matcha Measuring Spoon and add it to a cup or traditional matcha bowl
- Add a small amount of water heated to 80°C
- Begin whisking in an “M” shape using a bamboo or electric whisk
- Gradually add the remaining 80°C water
- Continue whisking until the matcha becomes thick, smooth, and creamy

How Matcha is Made
We source our matcha from Ise Bay in Mie Prefecture, located on the Pacific coast of Japan. The green tea used for matcha is called tencha, and this tea is produced specifically to be ground into matcha powder. The tea plant used is the Yabikita tea cultivar.
To produce the high levels of pigment, chlorophyll and healthy amino acids such as L-theanine, the leaves are covered, or shade-grown, for 20 days before being harvested during the spring, or the Ichibancha. The fine powder is then made by slowly stone milling de-stemmed and de-veined leaves, a process that requires exceptional skill and patience.
