Tea Story

Our organic ceremonial matcha green tea imparts a mellow and deep flavour - which stems from the high concentration of healthy amino acids - with subtle hints of sweetness. This matcha powder is meticulously produced by talented tea experts from the Ise Bay area of the Mie Prefecture region in Japan. Farmers in this region have been producing high quality green tea for over 800 years. Our Ise Bay colleagues make use of ancient knowledge, as well as state-of-the-art technology, to create the most sublime green teas.

This premium organic matcha tea makes the perfect healthy drink and can be enjoyed in the traditional way or used as a natural flavour enhancer in smoothies and juices as part of a healthy breakfast.

Our organic matcha tea is made from shade-grown tea leaves from Camellia Sinensis bushes. Only the finest handpicked tea buds are used. To prevent direct sunlight, the tea bushes are covered in the last 20 days before harvest. This process is known as ‘shading’. Shading slows down growth, increases the intensity of the natural green pigment and causes an escalation in the production of healthy amino acids. Our matcha tea is stone ground to a fine powder through the use of specially designed granite stone mills. It can take up to one hour to grind 30 grams of matcha.

Matcha Health Benefits: Researchers have found that the concentration of antioxidants available in matcha tea is 10 times greater than the amount of EGCG available in other fine green teas. EGCG can help to prevent cellular and genetic damage by neutralizing unstable molecules - also known as ‘free radicals’. Matcha is also said to boost metabolism and help reduce cholesterol levels when consumed regularly.

Matcha can be prepared to different liquid consistencies. For thin tea, use approximately 1.75g of matcha powder with 75ml hot water. For thick tea, use 3.75g of matcha powder with 40ml of hot water. To prepare your matcha tea, place a small amount of sieved matcha powder into your matcha bowl using a bamboo spatula. Add 70℃ hot water. Whisk the mixture using a bamboo whisk until the liquid has a uniform consistency. Finally, when enough foam has formed on the surface, beat at medium speed to produce finer bubbles.

I was recently diagnosed with breast cancer and had read on the internet that matcha tea can help (no idea if this is actually true but willing to give anything a go). I hate normal tea so was prepared to hold my nose while I drank it, however - I love it! No 66 has a lovely taste and gives me a real lift for a few hours after I've drunk it. I could really do with drinking 3 a day to gain maximum benefit for cancer but as it is understandably so expensive I'll have to stick to one. I've never put tea on my Christmas list before but I think this could be the year!

So I bought the ORGANIC CEREMONIAL GRADE JAPANESE MATCHA - NO.66 as an alternative to coffee... I chose it despite the price because of claims that it was organic, ceremonial grade and not bitter... I dont know about the former, but it is so bitter... I stooped to putting sweetener in it (I know I know) but it was honestly horrid (i used 1 teaspoon of powder) and now I have 」24.99 worth of bitter powder (I feel cheated) and from the T&C chances of a refund seem slim.

I bought a double walled thermo glass a while back. I probably don稚 make the Matcha in the correct way, but this recipe is to my liking.
I pick a good handful of fresh mint leaves from the garden and put them in the glass. I pour in freshly boiled water until it is 2/3rds full and let it steep for a few minutes. I then top up with cold water and take out the mint. I add the suggested amount of matcha and use a whisk to mix it well. For my it works a treat as I really enjoy fresh mint tea. I find drinking the matcha on its own is not so much to my liking, but the mint makes it more agreeable.
