About our matcha:
Only the finest, shade grown Camellia Sinensis leaves are used to produce our award-winning Japanese ceremonial matcha green tea powder. This exquisite and luxurious healthy matcha powder is meticulously grown, delicately farmed and carefully stone-ground by our exceptionally talented Japanese tea experts from the revered tea district of Ise Bay in the Mie Prefecture region of Japan. Farmers in Ise Bay have been producing tea for over 800 years and have passed down their ancient knowledge from generation to generation since the 13th century. Matcha production is a very intricate process which requires exceptional skill and patience. It can take up to one hour to grind 30 grams of matcha powder.

Matcha tea has become immensely popular in recent years because of its proven health benefits, refreshing flavour and intoxicating vibrant green colour.

Matcha tea is dominated by healthy amino acids, which impart a beautifully fresh flavour. This exceptionally high-quality grade of matcha has an intense sweetness and a much deeper and less bitter flavour than standard grade matcha powders. 

Matcha Health Benefits: Researchers have found that the concentration of antioxidants available in matcha tea is 10 times greater than the amount of EGCG available in other fine green teas. EGCG can help to prevent cellular and genetic damage by neutralizing unstable molecules - also known as ‘free radicals’. Matcha is also said to boost metabolism and help reduce cholesterol levels when consumed regularly. Matcha can be prepared to different liquid consistencies. For thin tea, use approximately 1.75g of matcha powder with 75ml hot water. For thick tea, use 3.75g of matcha powder with 40ml of hot water. To prepare your matcha tea, place a small amount of sieved matcha powder into your matcha bowl using a bamboo spatula. Add 70℃ hot water. Whisk the mixture using a bamboo whisk until the liquid has a uniform consistency. Finally, when enough foam has formed on the surface, beat at medium speed to produce finer bubbles.

Other Uses: Matcha is very popular for use in cooking - mainly to make cakes, sweets and ice creams. Our ceremonial matcha is perfect for making delicious desserts and for infusing into spicy coconut curries.
